Veggie Ham and Quinoa Salad

Ingredients

  • Quinoa
  • Green Slice Applewood Smoked Organic Deli Slices
  • Cilantro, chopped
  • Sriracha hot sauce

Directions

Cook the quinoa and let it cool down. Stack the deli slices on top of each other, cut into small squares and add to the quinoa bowl. Top off with cilantro and hot sauce.

Veggie Ham & Cucumber Sandwich

Ingredients

  • Whole wheat or whole grain sandwich bread
  • Green Slice Applewood Smoked Organic Deli Slices
  • Dairy-free cream cheese
  • Cucumbers, sliced

Directions

Spread the cream cheese on one bread slice, add on the cucumbers and deli slices. Top with the other bread slice and slice in half.

Roasted Brussels Sprouts and Veggie Ham

Ingredients

  • Brussels sprouts, halved
  • Green Slice Applewood Smoked Organic Deli Slices
  • Olive oil
  • Salt and pepper to taste

Directions

Trim the Brussels sprouts, chop them in halves, and toss with olive oil, salt, and pepper on a parchment-lined baking sheet. Bake in the oven at 425˚F for 20 minutes.

Stack the deli slices on top of each other and cut into squares. Toss on top of the Brussels sprouts and bake for another 10-15 minutes until the veggies are tender and golden brown around the edges.

Veggie Ham & Pancake Roll-Ups

Ingredients

  • Pancakes

  • Lettuce or spinach leaves

 

Directions

Place the veggie ham deli slices and lettuce or spinach on top of the pancake. Roll up the pancake, add toothpicks to hold everything in place, and cut into pieces.

Grilled Ham & Cheese

Ingredients

  • Whole wheat sandwich bread or pita
  • Green Slice Applewood Smoked Organic Deli Slices
  • Dairy-free cheddar cheese

Directions

Layer the deli slices and cheese in between the bread. Heat in a panini press until the bread is golden and the cheese is melted.

Baked Veggie Ham & Cauliflower Mac and Cheese

Make the mac and cheese. Stack the deli slices on top of each other, cut into squares, and sprinkle on top of the mac and cheese prior to putting the dish in the oven.

Veggie Ham & Cheese Croissant

Preheat the oven to 350˚F. Slice the croissant and fill with deli slices and cheese. Bake for 3-5 minutes, until the cheese is melted and croissants are toasted and flaky.

Veggie Ham Deli Slices

Veggie Ham & Carrot Hummus Sandwich

Ingredients

  • Multigrain ciabatta roll, toasted
  • Green Slice Applewood Smoked Organic Deli Slices
  • Pea shoots
  • Carrot hummus:
    • 1 can (16 oz) chickpeas (garbanzo beans)
    • 2 cups steamed or boiled carrots
    • 3 tbsp tahini
    • 2 tbsp olive oil
    • 2 tsp lemon juice
    • 1 clove of garlic, minced
    • Pinch of salt, pepper, and paprika

Directions

Carrot Hummus: Chop the carrots and steam or boil until soft. Add the cooked carrots to a blender or food processor. Drain the chickpeas, then add them to the blender, along with the tahini, olive oil, lemon juice, garlic, salt, pepper and paprika. Blend for a few minutes until thick and creamy.

Sandwich: Slice the ciabatta roll lengthwise in half. Spread a layer of carrot hummus on the bottom half of the roll. Place on the deli slices and pea shoots, cover with the other ciabatta half and slice in half.

Italian Sub

Ingredients

  • Large whole grain Italian sub roll
  • Dairy-free Provolone cheese
  • Green Slice Applewood Smoked, Veggeroni, and Pistachio Organic Deli Slices
  • Tomatoes, sliced
  • Onion, sliced
  • Lettuce
  • Chopped banana peppers (optional)
  • Extra virgin olive oil
  • Balsamic vinegar
  • Basil, rosemary, freshly ground black pepper to taste

Directions

Slice the sub roll lengthwise and place in the middle of a sheet of wax or butcher paper and drizzle the inside of the bread with olive oil and balsamic vinegar. Add the cheese, deli slices, tomatoes, onion, lettuce, banana peppers, herbs and pepper. Wrap the sandwich tightly in the butcher paper and slice the sandwich into 4 quarters. Enjoy now or wrap up tightly in one more paper until ready to eat.
