Mixed Garden Sandwich
- Multigrain ciabatta roll, toasted
- Mixed Garden Organic Deli Slices
- Pea Shoots
- Halved cherry tomatoes
- Fresh cut parsley
- Pine nuts (optional)
- Carrot hummus:
- 1 can (16 oz) chickpeas (garbanzo beans)
- 2 cups steamed or boiled carrots
- 3 tbsp tahini
- 2 tbsp olive oil
- 2 tsp lemon juice
- 1 clove of garlic minced
- Pinch of salt, pepper, and paprika
Carrot Hummus: Chop the carrots and steam or boil until soft. Add the cooked carrots to a blender or food processor. Drain the chickpeas, then add them to the blender, along with the tahini, olive oil, lemon juice, garlic, salt, pepper and paprika. Blend for a few minutes until thick and creamy.
Zucchini: Using a peeler or sharp knife, cut into strips (lengthwise). Cook for 3 minutes in boiling water and season with salt and pepper.
Sandwich: Slice the ciabatta roll lengthwise in half. Spread a layer of carrot hummus on the bottom half of the roll. Place on some zucchini and the deli slices. Add some cherry tomatoes, parsley, pea shoots, and pine nuts. Serve with the other ciabatta half on top or slightly on the side.
