Spinach Spaghetti with Mortadella

Ingredients

  • Spinach spaghetti
  • Green Slice Pistachio Organic Deli Slices
  • Black beans
  • Parsley, chopped
  • Pine nuts (optional)

Directions

Cook the spaghetti and top with the deli slices, pine nuts, and parsley. Serve with a side of heated beans.

Mortadella & Mozzarella Sandwich

Ingredients

  • Whole wheat baguette
  • Green Slice Pistachio Organic Deli Slices
  • Mozzarella, sliced
  • Tomatoes, sliced
  • Cilantro, chopped
  • Olive oil
  • Pine nuts (optional)

Directions

Layer the deli slices, mozzarella, and tomatoes in between a toasted baguette. Top off with cilantro, pine nuts, and a drizzle of olive oil.

Pistachio Mortadella Charcuterie Board

Ingredients

  • Green Slice Pistachio Organic Deli Slices
  • Cherry tomatoes
  • Yellow bell peppers, sliced
  • Pistachios

Directions

Place all ingredients on a charcuterie board. Pairs great with wine or beer.

New Orleans Muffaletta

Ingredients

  • Muffaletta bread or Italian-style bred (ciabatta, focaccia, or any good bread with a relatively soft crust)
  • Green Slice Pistachio, Veggeroni, and Applewood Smoked Organic Meatless Deli Slices
  • Dairy-free Provolone cheese
  • Olive Salad, Bruschetta, or Tapenade

Directions:

Cut bread in half, lengthwise, and scoop out about half of the soft dough from top and bottom pieces (this is to provide more room for the sandwich ingredients). Brush the inside bottom of loaf with olive oil or juice from the olive tapenade marinade.

Spread half of the olive tapenade on the bottom piece. Layer the Applewood Smoked, Veggeroni, and Pistachio cold cuts and cheese on the bottom piece. Spread the remaining olive tapenade on the last cold cut layer and top with the hollowed bread. Press down lightly and let it rest 10 minutes before eating so the olive juices get absorbed into the bread. Per tradition, always serve the Muffuletta sandwich at room temperature, never toasted.

Italian Sub

Ingredients

  • Large whole grain Italian sub roll
  • Dairy-free Provolone cheese
  • Pistachio, Applewood Smoked and Veggeroni Organic Deli Slices
  • Tomatoes, sliced
  • Onion, sliced
  • Lettuce
  • Chopped banana peppers (optional)
  • Extra virgin olive oil
  • Balsamic vinegar
  • Basil, rosemary, freshly ground black pepper to taste

Directions

Slice the sub roll lengthwise and place in the middle of a sheet of wax or butcher paper and drizzle the inside of the bread with olive oil and balsamic vinegar. Add the cheese, deli slices, tomatoes, onion, lettuce, banana peppers, herbs and pepper. Wrap the sandwich tightly in the butcher paper and slice the sandwich into 4 quarters. Enjoy now or wrap up tightly in one more paper until ready to eat.
