Vegan Pepperoni & Sweet Pea Hummus Sandwich

Ingredients

  • 2 large slices toasted multigrain sandwich bread
  • Green Slice Veggeroni Oganic Deli Slices
  • Cucumbers, sliced
  • Microgreens
  • Sweet pea hummus:
    •  1 can (16 oz) chickpeas (garbanzo beans)
    •   1 cup (150 g) frozen sweet peas
    •   2 tbsp tahini
    •   2 tbsp olive oil
    •   2 tsp lemon juice
    •   1 clove of garlic minced
    • Pinch of salt and pepper

Directions

Sweet Pea Hummus: Drain the chickpeas, then add the chickpeas to a blender or food processor. Run the frozen peas under hot water to thaw, add them to the blender, along with the tahini, olive oil, lemon juice, garlic, salt and pepper. Blend for a few minutes until thick and creamy.

Sandwich: Toast the 2 slices of bread. Layer the deli slices across one slice of bread. Spread a layer of sweet pea hummus on top of the deli slices. Place on some sliced round cucumbers. Add some microgreens and top off with the 2nd slice of bread. Cut the sandwich in half and serve.

Bite-Size Vegan Pepperoni Pizza

Ingredients

  • Whole wheat English Muffins
  • Marinara sauce
  • Dairy-free Mozzarella, shredded
  • Green Slice Veggeroni Organic Deli Slices, pulled apart into pieces
  • Oregano (optional)
  • Pepper (optional)

Directions

Slice the muffins in halves and place onto a baking tray. Top each half with marinara sauce, cheese, and vegan pepperoni. Broil on high for 5-8 minutes, or until cheese is melted. Let cool 2-3 minutes. Sprinkle the pizzas with oregano, pepper, and serve.

Veggeroni Garden Wrap

Ingredients

  • Whole wheat wrap
  • Green Slice Veggeroni Organic Deli Slices, 3-5 slices folded
  • Dairy-free cheese, 1 slice cut in half
  • Romaine lettuce, 2 leaves
  • Red onion, sliced

Directions

Place the lettuce and cheese across the wrap leaving about an inch around the perimeter of the wrap uncovered. Add on folded deli slices and onions.

Optional: microwave the wrap for 15-30 sec to soften the wrap to make it easier to roll

Drizzle mayo over the onions, roll the wrap, tucking the 1 inch of perimeter you left under itself as you go, cut in half, and serve.

Vegan Pepperoni Kid's Snack

Ingredients

  • Green Slice Veggeroni Organic Deli Slices
  • Braided twists or thick pretzel sticks
  • Cucumbers, sliced
  • Yellow bell peppers, sliced
  • Cherry tomatoes, halved

Directions

Wrap the deli slices around the pretzel sticks and serve with sliced cucumbers, tomatoes and bell peppers.

Italian Sub

Ingredients

  • Large whole grain Italian sub roll
  • Dairy-free Provolone cheese
  • Green Slice Veggeroni, Applewood Smoked, and Pistachio Organic Deli Slices
  • Tomatoes, sliced
  • Onion, sliced
  • Lettuce
  • Chopped banana peppers (optional)
  • Extra virgin olive oil
  • Balsamic vinegar
  • Basil, rosemary, freshly ground black pepper to taste

Directions

Slice the sub roll lengthwise and place in the middle of a sheet of wax or butcher paper and drizzle the inside of the bread with olive oil and balsamic vinegar. Add the cheese, deli slices, tomatoes, onion, lettuce, banana peppers, herbs and pepper. Wrap the sandwich tightly in the butcher paper and slice the sandwich into 4 quarters. Enjoy now or wrap up tightly in one more paper until ready to eat.

Vegan Pepperoni & Cheese Croissant

Preheat the oven to 350˚F. Slice the croissant and fill with the deli slices and cheese. Bake for 3-5 minutes, until the cheese is melted and croissants are toasted and flaky.
